Mango Avocado Salad With Lime Chia Seed Dressing

See this terrific recipe at Foods For Long Life IMG_3207 I really like her technique for making chia seed dressing:
1 teaspoon raw, chia seeds 2 tablespoons water 1 packed tablespoon of fresh, chopped, cilantro 2 tablespoons freshly squeezed lime juice 1 tablespoon extra virgin olive oil 1/2 teaspoon sea salt A few shakes of black pepper Early in the day, put 1 teaspoon of chia seeds into 2 tablespoons of water. Let sit for several hours until it forms a gel. Then combine this chia gel with the cilantro, lime juice, olive oil, salt and pepper.

Blueberry-Spinach-Almond Salad

spinach blueberry almond salad I am on the hunt for lovely blueberry recipes as we have a few bushes in our yard that are (finally) coming towards ripeness. This one is a good start...bon appetit! Ingredients: 8 C baby spinach 1 C fresh blueberries 1/2 red onion, thinly sliced 1 tsp olive oil 2 T fresh lemon juice 1 T maple syrup 1/2 tsp black pepper 2 T dried apricots, finely chopped 1/4 C. soaked, chopped almonds Directions: Soak almonds 4+ hours. Remove casings and chop until resembling rice. Combine red onion, lemon juice, maple syrup, pepper, apricots and almonds and allow to resonate together, covered, for about an hour in the fridge. Toss together blueberries and spinach. Add in other ingredients and toss together.

Here's another vegan cheesecake recipe-- not exactly raw, but it came through my Twitterfeed and was certainly yummy enough to pass along for anyone who eats tofu and graham cracker crust (you could also just go pick up tidbits from the other raw cheezcake/chiazz cake recipes here and substitute for what you don't like/don't eat).  In any case, Enjoy!

Everyone has their own variation of a vegan cheesecake recipe.  This is our world’s most delicious vegan cheesecake recipe. To make it you will need: Directions
  1. Preheat the oven to 350°F.  Wrap the tofu in a paper towel and gently squeeze excess moisture out.  This will help keep the final product from being runny.
  2. In a blender, combine the tofu, choice of milk, sugar, vanilla extract and maple syrup or agave nectar.  Blend until smooth.
  3. Pour the blended mixture into the pie crust and smooth the top with a spatula.
  4. Bake for 40-45 minutes.
  5. Remove from vegan cheesecake from the oven and place it on the counter to cool.
  6. Place it in the fridge when the vegan cheesecake is cool and chill overnight or for at least 10 hours
  7. Top the entire vegan cheesecake with strawberries.

Recipe: Yummy Raw Strawberry Ice Cream

Here is a free recipe for Strawberry Ice Cream: Sweet and bursting with strawberry flavor! Pour chilled ice cream into your ice cream machine and follow the manufacturers instructions. It should take approximately 20 minutes to process. This will give you soft serve ice cream. If you prefer a harder scoop, pour the ice cream back into your storage container and freeze. It should be hard within an hour or two. Optional: If you prefer your Strawberry Ice Cream with extra Strawberry Sauce, blend 1/2 cup strawberries and 1 tablespoon agave. Pour Strawberry Sauce into ice cream maker just before turning off, or pour sauce into storage container filled with soft serve ice cream and stir in. Refreeze for hard ice cream. Raw Carob-Chia-Coconut Puddin

carob puddingIf at any time you were addicted to Jello puddings I am in the process of putting together a number of yummy recipes that replicate those confections but which eliminate the dairy, soy, egg powders, hydrogenated oils, processed sugars, and assorted other additives that you might not want in your body. Today's recipe is pretty satisfyingly creamy and sweet and sort of akin to a caramel puddin (but don't expect the same flavour, okay?) Ingredients: Place the following together into your VitaMix canister: 1 peeled and pitted punky (but not rotten) Avocado (softer the better) 2 T. Raw Carob Powder 1/4 C. Chia gel (chia seeds in water for 10+ minutes until a gel of your consistency is obtained) 1/2 C. Filtered Water 2 T. Grade "C" Maple Syrup (the dark, strong-flavoured stuff) 2 T. organic Coconut Flakes Pinch of Celtic Sea Salt (optional) Pinch of Vanilla extract (organic, non-alcoholic- optional) 1/2 - 1 T. Almond Butter (optional-- but I really like what this does for creaminess) Spin in the VitaMix until done. It is my experience that this will satisfy you like no Jello pudding will... maybe because it is higher in fibre? Maybe because of the chia? Enjoy!

(Ok, maybe not so good in school or church.) Laughter works so wonderfully well in the moment, but it has some surprising long-term health benefits as well. In the book A Better Brain at Any Age: The Holistic Way to Improve Your Memory, Reduce Stress, and Sharpen Your Wits (Conari Press, 2009), author Sondra Kornblatt explores how laughter can truly make you feel better. She writes that the new field of gelotology is exploring the benefits of laughter. It was brought to the public’s awareness in Norman Cousins’ memoir Anatomy of an Illness. Cousins found that comedies, like those of the Marx Brothers, helped him feel better and get some pain-free sleep. That’s because laughter helps the pituitary gland release its own pain-suppressing opiates. What can laughter do?: Humor and creativity work in similar ways, says humor guru William Fry, M.D., of Stanford University–by creating relationships between two disconnected items, you engage the whole brain. Humor works quickly. Less than a half-second after exposure to something funny, and electrical wave moves through the higher brain functions of the cerebral cortex. The left hemisphere analyzes the words and structures of the joke; the right hemisphere “gets” the joke; the visual sensory area of the occipital lobe creates images; the limbic (emotional) system makes you happier; and the motor sections make you smile or laugh.

Strawbale Gardening for your Backyard

Here is an unusual way to garden-- get yourself some strawbales...  the following is from an article found at Nichols Garden Nursery.

Straw Bale Culture Salad Greens growing in straw bales were featured in our display garden at the 2004 Northwest Flower and Garden Show in Seattle. I designed this vegetable garden to promote Plant A Row For The Hungry, a project of the Garden Writers Association. Over 75,000 people visited this five day gardening extravaganza to see beautiful gardens, attend lectures, shop, and learn new gardening techniques. Our garden, constructed and prepared by fellow GWA members, Pierce County Washington Master Gardeners and Lake Washington Technical College students, friends and family earned a gold medal and the prestigious ÒPeople's Choice" award. We featured a few ideas that you will see in our demonstration garden here at Nichols this summer. Foremost among these is gardening on straw bales. The old adage Ònecessity is the mother of invention" certainly applied, because all display gardens are required to have a kickboard or barrier separating the garden from the show floor. Hating to relinquish valuable planting space to a concrete or wood structure, I thought why not straw or hay bales?Continue reading here...
